Greek Me

I've been eating/drinking pretty badly and kept thinking about my Donna Hay cookbook. Back in San Francisco, I made her Greek Salad and have been meaning to do it again. I didn't want to go to the grocery store just for lettuce, tomato, fetta, and olives. Instead I kept thinking of beets and the red cabbage I already had in my fridge...done and done...! Here it tis:

Red Cabbage Greek Salad

Red Cabbage - sliced in chunks
1 Japanese cucumber
Mint Leaves
Canned Beats
Feta Cheese stuffed Olives

Dressing from Donna Hay
2 tablespoons olive oil (maybe too much)
1 tablespoon red wine vinegar
Sea salt and black cracked pepper
Added some lemon juice once it was all mixed together

At the same time I made Sour Cherry Crumb Cake from Martha Stewart's magazine, but instead of regular cherries, I soaked the cherries in brandy overnight...CRAZY!
